ALL BRAN MUFFINS



All-Bran Muffins
....Original recipe:
1 1/4 Cup flour
1/2 Cup sugar
1 T. baking powder
1/4 teaspoon salt
2 Cups All-Bran cereal
1 1/4 Cups fat-free milk
1 egg
1/4 Cup oil
1 Stir together flour, sugar, baking powder and salt. Set aside.
2 In large bowl, combine All-Bran, milk egg, and oil. Mix well.
Add flour mixture, stirring well.
3 Portion evenly and put in muffin lined tins.(I spray the inside of
paper liners.
Makes 12
4.Bake at 350...20-25 minutes.
.....Here is what I do. I make 4x this recipe and freeze them for later use.
8 Cups All-Bran
5 Cups skim milk
4 Eggs (or egg starts)
1/2 Cup oil
1/2 Cup applesauce
5 Cups flour (2 1/2 C. whole wheat + 2 1/2 C. regular)
2 Cups sugar (or Splenda)
4 T. baking powder
1 tsp. salt
2 T. cinnamon
2 T. vanilla
.....I add some of these fruits and nuts:
1 1/2 C. chocolate chips,
coarsely chopped walnuts, slivered almonds
coconut, chopped apple (with peelings), dried
prunes, dates, Craisins, raisins, blueberries (fresh
or frozen), or any other dried fruit you wish.
Makes about 52 muffins with paper liners.
(I spray the inside of about 6 at
a time, as they spread out after you spray the paper liners)
When they are cooled down, I take the papers off then freeze
in freezer bags.
