FESTIVE MEATLOAF

Festive Meatloaf
(Pictured with kale and cabbage coleslaw)
2 lbs lean ground beef
3/4 cup each chopped green and red peppers
1 med onion - chopped fine
2 tsp garlic
1/4 c chopped celery (optional)
1/2 tsp black pepper
1 tsp cumin (optional)
3 eggs beaten
1/2 c ketchup
1/4 c salsa
1 tbsp worcestershire sauce
3/4 c bread or cracker crumbs
1/2 - 1 cup grated cheese - optional
Saute all veggies in oil. Mx together remaining ingredients. Add sauteed veggies and mix well. Divide evenly into 2 loaf pans. Bake at 375 for 35-40 minutes. Add grated cheese to one or both loaves for the last 15 mins of baking time.
Drain off any excess grease. Let cool a bit before slicing! Enjoy!
